Daily Meal Plan

I dropped the ball on doing an all week meal prep this Sunday so
I ran to HEB at 10 at nite to stock up on the usual:
bananas, 2 cartons of organic eggs, cottage cheese, frozen and fresh veggies, peanut butter, and almond milk, tuna, and of course, sweet potatoes! :)
I always keep these dry ingredients stocked: couscous, quinoa, brown rice, beans, and oats. Shopping late at nite is the way to go. Yes, you might have to dodge late nite re stalkers and their towers of  food pallets rolling down the ailes, but that's why we use the nimble half size carts rite? After a full day, I cooked up some quinoa, homemade protien bars, and spaghetti squash to hold me over until the weekend. We know abs are made in the kitchen so stick to making meals and snacks ahead of time to avoid reaching for a McDonalds biscuit (God forbid you even think of doing that) or a donut at the office. Here's a montage/ collage of yesterday's eats:

Breakfast
Ezekiel English Muffin with chia seeds, banana, and organic peanut butter (ie, made only with peanuts, no added sugars etc)
Lunch
Turkey sandwich with pineapple
Snack
16 oz Hemp Protein Shake with soy, bananas, strawberry, vanilla extract (the hemp has no flavor, but I prefer more natural sources of protein to the chemically processed and flavored powders)
Pre & Post Workout
Spaghetti Squash with cilantro, eggs, 1/2 Ezekiel muffin with black bean hummus. YUM!
Late nite snack
Banana, soy milk, peanut butter

Note: Ezekiel bread is delicious! Its in the frozen food isle and it tastes oh so sweet and yummy, only 80 calories per muffin, and its made from sprouted organic grains meaning its loaded with enzymes unlike SAD bread with is loaded with sugars and flour.

Happy Weekend

Hello there, I hope everyone had a lovely week and is revving up for an amazing weekend! I had a full morning of meetings and interviews then a lovely late lunch at Lupe Tortilla with a skinny margarita and lettuce wrapped fajitas. I was in heaven. The patio was bustling with trays of sizzling fajitas, hand shaken margaritas, and a fire pit nearby. I might as well have been eating on the beach Once the margarita hit the table, I felt like I was instantly transported to a beach side cabana. I love me some fajitas and ritas :) This weekend my sister is coming into town for a visit. I'm so excited! Can't wait to catch up over a glass of wine. I may be fit, but wine is definitely in my diet right now. :)  Happy Weekend everyone! Enjoy yourself--you've earned it!

Happy Good Friday

I hope you all are having a lovely Good Friday! Tonite I'm continuing my new job celebration at the Rooftop Lounge in Houston for a much needed date night with my man set to some bouncy and bass driven house music. Woot! I love me some good, happy, deep and soulful house.  Can't wait to dance it out. This weekend will be especially tempting for those of us on a clean eating diet, especially if you plan on hitting up Easter brunch. This would be a great time to share your goals with your family and friends so they can help keep you accountable and most importantly set some time aside to prep some healthy snacks. Keep your eye on the prize. Eat the eggs all you want, just take it easy on the cadbury eggs and waffles at Easter Brunch ;) You'll thank yourself later.  Check out today's workout below. Set some time aside for yourself this weekend and get moving! What ...
